When some fruits and vegetables have decided to enjoy a bit more of their open fire during this cold period, <strong>eating<\/strong> seasonally becomes a real<strong> challenge<\/strong>. However, it\u2019s a <strong>priority<\/strong> at<strong>tero<\/strong>. We have frequently emphasized the importance of prioritizing a diet based on <strong>seasonal<\/strong> and <strong>local<\/strong> products.<\/p>\n<p><strong>But why is it essential?<\/strong> In reality, each season corresponds to a <strong>need<\/strong> of our <strong>organism<\/strong>. In winter, marked by cold weather and a lack of exposure to sunlight, the body shows an increased need for <strong>nutrients<\/strong> and <strong>vitamin C<\/strong>. Fortunately, it\u2019s the season for foods <strong>rich<\/strong> in <strong>minerals<\/strong>, and <strong>tero<\/strong> doesn\u2019t lack <strong>creativity<\/strong> in growing them. But how do we cultivate them? It\u2019s quite simple: the cold room we use in summer to keep vegetables fresh transforms into a<strong> mushroom farm<\/strong>. As for chicory, it\u2019s cultivated in a <strong>room<\/strong> in the <strong>barn<\/strong>. These two crops share a common need: <strong>darkness.<\/strong><\/p>\n<p><strong>Growing like mushrooms:<\/strong><\/p>\n<p>We find<strong> two categories<\/strong> of mushrooms in our crops: <strong>shiitake<\/strong> and <strong>oyster mushrooms.<\/strong> To <strong>cultivate<\/strong> them, we receive <strong>bales<\/strong> (composed of straw and cereal) that we store on shelves, and with a wave of the wand (and a few weeks, of course): <strong>mushrooms<\/strong> emerge. Mushrooms, especially <strong>shiitake<\/strong>, require a lot of <strong>constant<\/strong> <strong>humidity<\/strong> (<strong>90%<\/strong> to be precise). It\u2019s a real underground <strong>network<\/strong> that can extend for <strong>kilometers<\/strong>. Some mushroom networks are among the <strong>largest living organisms known on Earth.<\/strong> Perhaps we\u2019ll experience a tragic end like in \u201cThe Last of Us?\u201d<\/p>\n<p><strong>Chicory or endive ?<\/strong><\/p>\n<p>In winter, in addition to being as white as a chicory, if there is too much light, it becomes bitter, the core rises, and it produces a flower. We receive the <strong>roots<\/strong>, which are planted in<strong> April-May<\/strong> and <strong>harvested<\/strong> in <strong>October<\/strong> before they are sent to us*. We receive one batch per month. Then, we prepare the roots by sorting the different leaves.
